Umami isn’t a primary taste

Apparently Umami isn’t a primary taste.

Not the same as bitter, salt, sour and sweet.

Umami is proposed to be reliant on sugar/salt receptors to be tasted. Lacking independence removes it from being a primary taste.

And that fat is not a primary taste either because it doesn’t create a hedonic response. 

How does this change your tasting of coffee? Should we be so concerned in trying to identify Umami when it is actually perceived through the Sugar and Salt pathway?
