True Crema vs. False Crema
If you've stayed in a hotel lately or eaten somewhere with white tablecloths, you may have noticed the coffee arriving from a little capsule machine. Nespresso and its brethern has quietly become a shorthand for sophistication in places that should know better, establishments that confuse the convenience of a pod with the quality of a real coffee experience. And while the golden layer crowning that pod shot might look like the crema on a freshly pulled espresso, the truth is that it often isn't the same thing.
Let's talk about what crema actually is, why the distinction matters, and where the marketing quietly parts ways with the science.
What real crema is
In traditional espresso, crema is an emulsion, a foam of carbon dioxide, dissolved coffee oils, and roast compounds, forced into being by high pressure (around nine bars in a proper machine with a rotary pump), fresh grinding, and recently roasted beans that still hold their CO2. Those three things together, fresh roast, ground to order, and brewed under pressure, build a crema that genuinely signals freshness and craft. The chemistry of crema volume and stability has actually been studied.
Robusta, incidentally, produces more crema than Arabica. It carries more of the compounds that stabilize that foam, which is likely why it has long been blended into Italian-style espresso to thicken the head. The science of why is well documented. Hold that thought. It matters in a minute.
What the pod gives you instead
Here's where it gets interesting, and where we need to be precise, because Nespresso runs two different systems.
The Original line brews under real pressure, and it can produce a genuine pressure-emulsion crema. The catch isn't the technique, it's the coffee. Which brings us to the freshness problem below.
The Vertuo line is a different animal entirely. It doesn't build crema through pressure at all. It spins the pod at high speed, Nespresso's Centrifusion system, up to several thousand rotations per minute, and whips the coffee into foam through centrifugal aeration. The velvety layer on a Vertuo pour is, mechanically, closer to a milk frother's foam than to espresso crema. It's engineered. It's not earned.
That's the first thing worth understanding: the crema on a Vertuo is manufactured foam, not a sign of freshness.
The freshness tell: where's the degassing valve?
Now the part the marketing really doesn't want you thinking about.
Freshly roasted coffee off-gasses CO2 for days after roasting. That's why quality bags are nitrogen-flushed to displace oxygen and fitted with a one-way degassing valve. The valve lets CO2 escape without letting oxygen in.
A Nespresso pod has no degassing valve. So ask the obvious question: if the pod were filled with genuinely fresh, actively off-gassing coffee, where would the pressure go? It would build. Something would have to give.
The answer is that it doesn't need to go anywhere, because the coffee is deliberately degassed (aged) before it's sealed. This isn't speculation. Capsule manufacturers openly aim for a sweet spot: vent enough CO2 that the capsule won't rupture, but not so much that it tastes flat, and they use nitrogen in the degassing silos to hold the line on staleness. The absence of a valve isn't a design oversight. It's a tell. The coffee was rested and packed long before it reached you. Busted.
So let's talk about resting
Here's where we'll be honest and stake out CBI's position, because this is a real debate and we'd rather argue it in the open than pretend it isn't happening.
Much of the specialty world, your local fourth-wave barista included, insists that espresso should be rested after roasting, often one to three weeks, before it's pulled. And they have a legitimate technical reason: coffee that's too fresh is loaded with CO2, and that gas can cause channeling, gushing, and uneven, sour extraction at the machine. We're not going to pretend that reason doesn't exist. But rather than serve old, why not find a way to work with the fresh?
But here's our issue with how the idea has drifted. In its enthusiasm for resting, the artisan movement has blurred the line between fresh and rested, and that blurred line is exactly the space a company like Nespresso lives in. If the industry itself keeps repeating that older (rested) coffee is better coffee, it has handed the pod makers a marketing narrative on a silver tray: our months-old capsule is simply well rested.
Our position at CBI is that rest is a tool for managing extraction, not a virtue in itself. Coffee is fresh when it's made from current-crop green, roasted within the past month. A little rest to tame the gas is fine. But somewhere past that, developing quietly becomes fading: fewer volatile aromatics, less CO2, a flatter cup that happens to be easier to pull and easier to sell precisely because there's less going on in it. Ask yourself honestly whether the coffee is improving with age, or whether age is just sanding off the complexity until nothing's left to get wrong.
Reasonable people disagree here. We're telling you where we stand.
Two systems, one sleight of hand
Put it together and you get a genuinely clever piece of engineering plus marketing.
On the Vertuo, the crema is spun into existence, foam that mimics the look of freshness without any of the substance.
On the Original, the crema may be real pressure-crema, but it's pulled from coffee that was degassed and aged for months before it was sealed.
Either way, the golden layer in your cup is doing a job it was never doing on a proper espresso. It's a costume, not a credential. Meanwhile, plenty of thoughtful artisan roasters run lighter roasts that throw less crema, because lighter roasts hold less oil and CO2. Which is the whole irony: crema, or the lack of it, gets misread constantly. It can be the product of craft and deliberate choice, or the product of clever engineering. The foam alone tells very little.
Nespresso might as well read not-espresso, fair enough for the Vertuo, and a useful reminder in general that real crema comes from fresh coffee, ground to order, and brewed with skill and intention.
A final thought
You'll find no shortage of clips online of guests at some of the world's most expensive hotels, rooms running into the thousands per night, being served a pod and told it's a mark of luxury. If the wealthiest customers in the world are being handed engineered foam and calling it sophistication, it's worth asking what we actually value in a cup of coffee.
Is it time to bring back a little third-wave conviction? Can we win the freshness argument one customer at a time, not with snobbery, but by caring enough to go out of our way, against the grain of convenience culture, to make someone a cup that was actually fresh when it reached them?
That's the standard we train to. Not something rested into blandness and sealed months ago, but a cup made from current-crop coffee, roasted recently, ground to order, and pulled with intent. The difference is real. Don't let the foam fool you.
